Exhaust gas recirculation valves are part of the turbocharger assembly, and work when you lift off the throttle. Some exhaust gas is recirculated back around to the exhaust manifold, so when you start accelerating again, there is more gas to force the turbocharger to spin. Main aim of this is to reduce the lag time on the turbo. To be honest, it doesn't have much affect on a car at all, so it's a very minor thing, shouldn't take them more than half an hour to do.
