Am I missing something? I don't seem to see a standard defrost button. There is a max defrost...

Hmmmm why would you want a standard defrost button . You just set the controls to suit. Max defrost means short term ballistic all on the screen. once done its just maintaining the inside temp of the car for your comfort.

Max defrost is the only option for the front windshield. It will activate the AC if it's not on already to eliminate any moisture from the air and will direct air onto the front windshield and front side windows to defog them as much as quickly as possible.

There is another option I believe you are referring to. The max defrost button uses air on all windows to remove moisture and condensation etc. There is another button available that the symbol shows a windshield with a lightning bolt going through it. This button actually heats the windshield like most rear windows via wired heated mesh inside the glass. For some reason when building a new F56 cooper on the MINIUSA website, this option is not available.
